    Don’t get turn off by its name, it has nothing to do with the rat, the word “Lao Shu”, in Chinese literally means rat is named on this type of noodle because of its short tapered shape which is quite similar to the tail of a rat. While this name is used in region like Malaysia and Singapore, however, in Hong Kong and Taiwan, this type of noodle is more commonly known as Yin Zhen Fen (Silver needle noodle).

    Lao Shu Fen is semi-transparent in color and is made of rice flour. There are few ways that the noodle is being cooked, the most familiar style is stir-fried, claypot soy sauce, or simply being cooked as noodle soup with mince meat topping. The texture of the noodle is silky smooth and no hassle in eating because you can just easily slurp the noodle in.
